Paleo Turkey Meatloaf

Is midterm stress making you crave comfort food? Do you wish you could just throw your lab reports out the window and curl up with a bowl of mac’n’cheese, some fried chicken, and chocolate, lots and lots of chocolate? Well, don’t do that; then you really won’t feel motivated to do any work at all. Instead, take those cravings and channel them into making this healthy meatloaf that will taste just like your Mom makes. Seriously, make this for a friend and I swear they won’t even know it’s turkey unless you tell them.

RECIPE:

1 lb. lean ground turkey
1 egg
1/2 c. almond meal
Desired vegetables, diced and shredded: I use onions, celery, and zucchini, but carrots and tomatoes are all good too! (Use as little or as much as you want, I usually add about a half-cup each)
Desired spices: I used a bit of garlic and Bragg Organic salt-free seasoning

See, this is the pan I cooked it in, and it is very un-mixed at this point

Mix it all together (you can even do this in the same pan you are cooking it in, like I did! How lazy and easy is that!) and pat into a loaf pan or some form of baking dish with sides. Then pop it in the oven and bake for about 45 minutes or until the center is no longer pink.

I cooked this in my trusty toaster oven and it turned out amazingly! You can serve this with some zucchini slices baked in olive oil and garlic, on top of mashed cauliflower, whatever. Either way don’t forget the organic ketchup!
